Our thirteen associated farms are located in 4 distinct geographical regions in Rhode Island’s coastal waters. Each region produces unique oysters with commonalities in flavor based on factors such as the salinity of the water, tides and currents, or the bottom makeup.

 
 

Narragansett
Bay

The strong tides that move through Narragansett Bay give oysters grown here full strength oceanic brine, a pure sip of the cold Atlantic. The unique and enticing minerality that results from the sand and gravel lined ocean bottom at these farms rounds out the strong salt of the brine.

Between the tides and the sand, the gems that come from these waters have an incredible umami flavor that finishes almost buttery. It’s a flavor that you will not forget.

Potter’s Ponds

Clay and hard-packed sand line the bottom of these salt ponds. Their brackish water, resulting from a mix of sea water into fresh, gives oysters grown here a range of subtle to strong brine.

The unique water of these ponds give these oysters a nutty aftertaste, reminiscent of fall vegetables like pumpkin or butternut squash. These impress across the board, from seafood newcomers to the seasoned oyster connoisseur.

Ninigret
Pond

Minor tides and freshwater input give Ninigret Pond less salt content than any of our other regions. The pairing of this water quality with a bottom of mixed clay and sand impart a subtle and mouthwatering merroir to the oysters grown here.

Crisp and sweet, these delectable oysters will disappear faster than you can shuck them. Savor them and you’ll taste sweet cream, with a refined saltiness like a breath of fresh sea air.

Quonochontaug
Pond

As the saltiest of all of Rhode Island’s coastal ponds, Quonnie Pond holds a unique water quality that never fails to deliver. The sharp salt of these oysters hits your palate first, followed by an impressive earthy flavor like fresh wild mushrooms.

The umami quality of these oysters is rich and impressive. Grown on a bottom of sand, gravel, and boulders, harvesting them is no easy task. It’s worth it for a chance to experience the rare flavor of these oysters.
